Our Roaster
Our beans are sourced from Houston-based Katz Coffee, whose specialty is small-batch, custom roasting with a focus on sourcing the finest coffee beans from farmers around the world. Committed to selecting the highest quality “green” beans, Katz pays close attention to the whole roasting process to achieve perfection on every cup. Katz also gives back by donating to 12 different local causes, including Bat Conservation, Elephant Nature Park, PTSD Foundation, and more.
Our Craftsman
Wil Kirwan, founder of 3 Grackles Design, provided the beautifully handcrafted tables in the lounge. A former tech manager, he fell in love with the hobby of woodworking and decided to take a chance sharing his passion and creativity with the world. All of his tables were built with wood locally sourced from sawmills in Central Texas, with an artistic touch of colored epoxy. Though Wil is local, he has done commissions as far as Florida, Pennsylvania, and Hawaii! In addition to tables, he also does custom signage and wall installations.

Baking by Fadi Odeh
Fadi Odeh, a self-taught cook, local baker, and founder of In Between Cuisine, was a finalist on Fox’s Crime Scene Kitchen. Fadi has always been very devoted to his dishes and calls himself a food enthusiast. Enjoy his famous Gluten-Free Nut-Free Miso-Tahini Brownie and other delectable baked creations. Keep your eye out for new recipes as they rotate in, keeping the selection fresh and exciting. In his spare time, Fadi gives back to the community as a food volunteer with the University Baptist Church.
Baking by Lil’ Mama’s Kitchen
Lil' Mama (aka Heather) started baking at age 13. Originally from a small town south of Boston, Massachusetts, she moved to Austin in January 1999 - gaining the necessary skills and experience to follow her heart's desire in 2011 with the opening of Lil' Mama's Kitchen. As a wholesale specialty bakery, she provides made-from-scratch products that create happy food memories. She also offers limited-service catering and catering trays.
A Blend with a Story - Jumping Mouse
Our featured drip coffee blend is a signature blend from Katz that possesses rich and lively aromas of ripe cherries and orange zest, combined with flavors of milk chocolate, currants, and rounded off by lingering brown sugar and caramel notes.
This pre-roast blend of Central American, South American and African beans is inspired by the Plains Indians’ tale of Jumping Mouse: a mouse whose compassion, courage and selflessness take him on a journey far from all he knows and trusts. Along the way, he gives up everything – his sight to heal a blind bison, his sense of smell to a smell-less wolf – but never gives up his belief that he will finally see the Sacred Mountains he seeks. At the end of his long quest, when the Frog tells him to jump as high as he can, to hang on to the wind and trust, Jumping Mouse does – he jumps and the wind carries him higher and higher, he opens his eyes and he can see again: he sees the beautiful Sacred Mountains, and everywhere he has been on his long journey, as he soars into the sky, an eagle at last.
